Crunchy Fried Quaker Oatmeal & Sesame Chicken Fillets

03.11.2013 - Batam.  My son has no appetite, it could be...kid in this age very particular with food. Is like almost 3 months he has been losing appetite and losing weight.  Oh..well, kids love fried food, don't they??! He loves fried chicken and crunchy food too. so i have this idea of making him crunchy and crispy chicken instead of the store bought nuggets.  Nugget is his fav too..maybe time to fried him some good chicken.  i think he has been getting so fad up eating soup everyday! duh...

Anyway, this recipe can be baked if you want a healthier version.  You can served with any sauce you desire.



Ingredients:
Marinate chicken fillets for few hours

4 small chicken breast cut into half,
Pinch of salt, pepper & chicken granules
dash of garlic powder & paprika powder
1 egg white

Coating:
1 cup Quaker Oatmeal
1/4 cup white sesame seeds
Pinch of Salt & Pepper

1. Clean chicken fillets, if the fillet is too thick, you can flatten the chicken by cutting it into half.  Most importantly to tenderize the chicken.  Tenderizing the chicken with the back of the chopper, gently pound them thin or use a meat hammer to do the work.  Just a gentle pound.  This will gives the chicken breast a tender result when it was cooked.  If you do not pound the chicken breast, it will be hard and rubbery when it was cooked. and you don't want that.

2. Marinate the meat with salt, pepper, garlic and paprika for an hour.

3. In the hand mixing blender, blend the quaker oatmeal into fine crumbs. Remove from blender and add in sesame seeds mix well and set it aside.

4. Heat wok with 2 cups of cooking oil with medium heat.  For baking, pre-heat the oven to 200c. Line a baking pan with some aluminum foil. Drizzle it with a bit of olive oil and set it aside.

5. When the chicken fillets are ready to cook.  Coat chicken fillets with the oatmeal & sesame. Line the chicken on the baking pan, drizzle it with a bit of olive oil and bake it for 30 minutes or until golden brown.

6. In the wok, add in chicken fillet and fried till golden brown and dish up.  For baking, bake chicken fillet to 30mins or until golden brown.

7. Serve with your desire sauce.
